Ingredients
- Glutinous rice flour - 100 grams
- Water - 120 ml
- Sugar - 30 grams
- Cornstarch - 30 grams (for dusting)
- Red bean paste - 80 grams (sweetened, can be store-bought or homemade)
Steps
- In a mixing bowl, combine the glutinous rice flour and sugar.
- Gradually add the water to the flour mixture, stirring until smooth.
- Transfer the mixture to a microwave-safe bowl and cover it with a damp cloth.
- Microwave on high for 1 minute, then stir. Repeat this process for a total of 3 minutes, stirring in between each minute until the mixture becomes translucent and sticky.
- Dust a clean surface with cornstarch. Once the mochi mixture is cool enough to handle, transfer it onto the dusted surface.
- Divide the mochi into 4 equal pieces. Flatten each piece into a round disc using your hands or a rolling pin.
- Place a small spoonful of red bean paste in the center of each disc. Gently fold the edges of the mochi over the filling and pinch to seal.
- Roll the filled mochi in cornstarch to prevent sticking, and place them on a plate. Allow them to cool completely before serving.
