Ingredients

  • Glutinous rice flour - 100 grams
  • Water - 120 ml
  • Sugar - 30 grams
  • Cornstarch - 30 grams (for dusting)
  • Red bean paste - 80 grams (sweetened, can be store-bought or homemade)

Steps

  1. In a mixing bowl, combine the glutinous rice flour and sugar.
  2. Gradually add the water to the flour mixture, stirring until smooth.
  3. Transfer the mixture to a microwave-safe bowl and cover it with a damp cloth.
  4. Microwave on high for 1 minute, then stir. Repeat this process for a total of 3 minutes, stirring in between each minute until the mixture becomes translucent and sticky.
  5. Dust a clean surface with cornstarch. Once the mochi mixture is cool enough to handle, transfer it onto the dusted surface.
  6. Divide the mochi into 4 equal pieces. Flatten each piece into a round disc using your hands or a rolling pin.
  7. Place a small spoonful of red bean paste in the center of each disc. Gently fold the edges of the mochi over the filling and pinch to seal.
  8. Roll the filled mochi in cornstarch to prevent sticking, and place them on a plate. Allow them to cool completely before serving.
