Ingredients

  • Glutinous rice flour - 100 grams
  • Water - 80 ml
  • Honey - 1 tablespoon
  • Fresh strawberries - 4, halved
  • Red bean paste - 50 grams (optional for filling)
  • Cornstarch - 2 tablespoons (for dusting)

Steps

  1. In a mixing bowl, combine the glutinous rice flour and water, stirring until smooth.
  2. Add honey to the mixture and mix well until fully incorporated.
  3. Transfer the mixture to a microwave-safe bowl and microwave on high for 1 minute.
  4. Stir the mixture, then microwave for an additional 1-2 minutes, stirring every 30 seconds, until it becomes translucent and sticky.
  5. Dust a clean surface with cornstarch and pour the mixture onto it, allowing it to cool slightly.
  6. Divide the mixture into 4 equal pieces. Flatten each piece into a disc using your hands or a rolling pin.
  7. Place a half strawberry and a small amount of red bean paste (if using) in the center of each disc.
  8. Carefully fold the edges over the filling and pinch to seal, creating a ball shape.
  9. Dust the finished daifuku with more cornstarch to prevent sticking.
