- Water - 80 ml
- Honey - 1 tablespoon
- Fresh strawberries - 4, halved
- Red bean paste - 50 grams (optional for filling)
- Cornstarch - 2 tablespoons (for dusting)
Steps
- In a mixing bowl, combine the glutinous rice flour and water, stirring until smooth.
- Add honey to the mixture and mix well until fully incorporated.
- Transfer the mixture to a microwave-safe bowl and microwave on high for 1 minute.
- Stir the mixture, then microwave for an additional 1-2 minutes, stirring every 30 seconds, until it becomes translucent and sticky.
- Dust a clean surface with cornstarch and pour the mixture onto it, allowing it to cool slightly.
- Divide the mixture into 4 equal pieces. Flatten each piece into a disc using your hands or a rolling pin.
- Place a half strawberry and a small amount of red bean paste (if using) in the center of each disc.
- Carefully fold the edges over the filling and pinch to seal, creating a ball shape.
- Dust the finished daifuku with more cornstarch to prevent sticking.
