  • Water - 300 ml
  • Chicken breast, diced - 100 grams
  • Bell pepper, sliced - 1 medium
  • Onion, sliced - 1 medium
  • Spinach - 50 grams
  • Mozzarella cheese, shredded - 100 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions, chopped - for garnish

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a saucepan, heat olive oil over medium heat, add diced chicken, and season with salt and black pepper. Cook until browned, about 5 minutes.
  3. Add sliced onion and bell pepper to the pan and sauté until they soften, about 3-4 minutes.
  4. Add water to the pan and bring to a boil, then reduce heat and add the Japanese curry roux, stirring until dissolved and thickened, about 5 minutes.
  5. Stir in the cooked udon noodles and spinach, mixing well to combine. Remove from heat.
  6. Preheat the oven to 220°C (428°F).
  7. Spread the whole wheat pizza dough on a baking sheet or pizza stone to form a pizza base.
