Ingredients

  • Udon noodles - 200 grams

  • Carrot, sliced - 1 medium
  • Spinach leaves - 100 grams
  • Curry powder - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Chicken broth - 500 ml
  • Green onions, chopped - 2 stalks
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sauté until fragrant.
  3. Add the diced chicken breast to the pot, cooking until browned on all sides.
  4. Stir in the sliced carrot and cook for another 3-4 minutes until slightly softened.
  5. Sprinkle the curry powder over the ingredients in the pot, stirring well to coat everything evenly.
  6. Pour in the chicken broth and soy sauce, bringing the mixture to a simmer. Let it cook for about 10 minutes.
  7. Add the cubed tofu and spinach leaves to the pot, stirring gently. Cook for an additional 5 minutes until the spinach is wilted.
  8. Season with salt and black pepper to taste.
  9. To serve, divide the cooked udon noodles between two bowls and ladle the curry broth with chicken and vegetables over the noodles.
