- Curry powder - 2 tablespoons
- Soy sauce - 2 tablespoons
- Vegetable oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Chicken broth - 500 ml
- Green onions, chopped - 2 stalks
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sauté until fragrant.
- Add the diced chicken breast to the pot, cooking until browned on all sides.
- Stir in the sliced carrot and cook for another 3-4 minutes until slightly softened.
- Sprinkle the curry powder over the ingredients in the pot, stirring well to coat everything evenly.
- Pour in the chicken broth and soy sauce, bringing the mixture to a simmer. Let it cook for about 10 minutes.
- Add the cubed tofu and spinach leaves to the pot, stirring gently. Cook for an additional 5 minutes until the spinach is wilted.
- Season with salt and black pepper to taste.
- To serve, divide the cooked udon noodles between two bowls and ladle the curry broth with chicken and vegetables over the noodles.
