Ingredients

  • Gluten-free pizza crust - 1 medium
  • Japanese curry roux - 50 grams
  • Water - 200 milliliters
  • Cooked chicken breast, shredded - 100 grams
  • Red bell pepper, sliced - 50 grams
  • Onion, thinly sliced - 50 grams
  • Mushrooms, sliced - 50 grams
  • Mozzarella cheese, shredded - 100 grams
  • Olive oil - 1 tablespoon
  • Green onions, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat and sauté the sliced onion until translucent.
  3. Add the sliced red bell pepper and mushrooms to the pan and cook for an additional 5 minutes.
  4. Add 200 milliliters of water to the saucepan, then bring to a simmer and add the Japanese curry roux. Stir until the roux is fully dissolved and the sauce thickens, about 5-7 minutes.
  5. Spread the cooked chicken breast evenly over the gluten-free pizza crust.
  6. Pour the curry sauce over the chicken, spreading it evenly.
  7. Sprinkle the shredded mozzarella cheese over the curry sauce.
  8. Place the pizza in the preheated oven and bake for 10-12 minutes, or until the cheese is bubbly and golden.
  9. Remove the pizza from the oven and let it cool for a couple of minutes before garnishing with chopped green onions.
  10. Slice and serve hot.
