Ingredients

  • Wakame seaweed - 30 grams (dried)
  • Cucumber - 1 medium (sliced thinly)
  • Carrot - 1 medium (julienned)
  • Sesame oil - 1 tablespoon
  • Soy sauce (halal) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 tablespoon (toasted)
  • Green onions - 2 (finely chopped)
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Soak the dried wakame seaweed in warm water for about 10 minutes or until it rehydrates and expands.
  2. Drain the wakame and gently squeeze out excess water, then chop into bite-sized pieces.
  3. In a large mixing bowl, combine the sesame oil, soy sauce, rice vinegar, and sugar, mixing well to create the dressing.
  4. Add the rehydrated wakame, sliced cucumber, and julienned carrot to the bowl, and toss everything together until evenly coated in the dressing.
  5. Sprinkle the toasted sesame seeds and chopped green onions over the salad, and toss lightly again.
  6. If desired, add chili flakes for a bit of heat, then serve chilled or at room temperature.
