Ingredients

  • Sushi rice - 150 grams
  • Water - 200 ml
  • Rice vinegar - 30 ml
  • Sugar - 10 grams
  • Salt - 5 grams
  • Nori sheets - 2 sheets
  • Avocado - 1 medium, sliced
  • Cucumber - 1 small, julienned
  • Radishes - 4, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Sesame seeds - 1 tablespoon
  • Soy sauce - 15 ml
  • Wasabi - to taste
  • Pickled ginger - for garnish

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then combine with 200 ml of water in a rice cooker or pot and cook according to the rice cooker instructions or bring to a boil, then simmer on low for 18-20 minutes until tender.
  2. Once the rice is cooked, let it sit covered for 10 minutes. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved, then fold this mixture into the warm rice gently, allowing it to cool slightly.
  3. While the rice is cooling, prepare the toppings: slice the avocado, julienne the cucumber, and thinly slice the radishes and cherry tomatoes.
  4. On a large plate or pizza stone, spread the sushi rice into a round shape, about 1-2 cm thick, pressing it down to form a base.
  5. Cut the nori sheets into strips and sprinkle them over the rice base.
  6. Artfully arrange the sliced avocado, cucumber, radishes, and cherry tomatoes on top of the rice base.
  7. Sprinkle sesame seeds over the top and drizzle with soy sauce. Add wasabi to taste.
  8. Garnish with pickled ginger on the side and serve immediately.
