Ingredients

  • Cauliflower rice - 400 grams
  • Salmon sashimi - 100 grams
  • Tuna sashimi - 100 grams
  • Avocado - 1 medium, sliced
  • Cucumber - 1 small, julienned
  • Radish - 4 small, thinly sliced
  • Nori sheets - 2, cut into strips
  • Sesame seeds - 1 tablespoon
  • Soy sauce (low sodium) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Mirin (optional, for sweetness) - 1 teaspoon
  • Wasabi - to taste
  • Pickled ginger - for garnish

Steps

  1. Prepare the cauliflower rice by grating or processing it until it resembles rice grains. Steam or microwave the cauliflower rice for about 5 minutes until tender, then let it cool.
  2. In a small bowl, mix soy sauce, rice vinegar, and mirin (if using) to create a dressing.
  3. In a serving bowl, place half of the cauliflower rice as the base. Drizzle half of the dressing over the rice.
  4. Arrange the salmon sashimi, tuna sashimi, avocado slices, cucumber, and radish on top of the cauliflower rice.
  5. Sprinkle sesame seeds and nori strips over the arranged toppings. Drizzle with the remaining dressing.
  6. Serve with a side of wasabi and pickled ginger for added flavor.
