  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Fresh cilantro - 1 tablespoon, chopped
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste

Steps

  1. Cook the soba noodles according to package instructions, usually about 5-7 minutes, then drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the julienned cucumber, carrot, red bell pepper, edamame, and chopped green onions.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and a pinch of salt to create the dressing.
  4. Add the cooked soba noodles to the bowl with the vegetables, then pour the dressing over the top.
