- Soba noodles - 100 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Radish (daikon or red) - 50 grams, thinly sliced
- Green onion - 2 stalks, finely chopped
- Sesame seeds - 1 tablespoon, toasted
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Rice vinegar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Ice water - 1 liter
Steps
- Bring a pot of water to a boil and add the soba noodles. Cook according to package instructions, usually around 5-8 minutes.
- Once cooked, drain the soba noodles and rinse them under cold running water to stop the cooking process. Then, submerge them in a bowl of ice water for about 5 minutes.
- While the noodles are cooling, prepare the vegetables: julienne the cucumber and carrot, and slice the radish thinly.
- In a small bowl, mix the soy sauce, mirin, rice vinegar, and sesame oil to create the dipping sauce.
- Once the soba noodles are chilled, drain them from the ice water and place them on a serving plate.
- Top the soba noodles with the julienned cucumber, carrot, sliced radish, and chopped green onion.
- Sprinkle the toasted sesame seeds over the top and serve the dipping sauce on the side.
