Ingredients

  • Chickpeas - 200 grams
  • Brown rice - 100 grams, cooked
  • Miso paste - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Panko breadcrumbs - 50 grams
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Black pepper - to taste
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  2. Add the cooked brown rice, miso paste, chili paste, minced garlic, grated ginger, chopped green onion, panko breadcrumbs, soy sauce, sesame oil, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Shape the mixture into two burger patties.
  4. Heat a non-stick skillet over medium heat and lightly oil it. Cook the patties for about 5-6 minutes on each side until golden brown and heated through.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly in another pan if desired.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, tomato slices, avocado slices, and a dollop of vegan mayonnaise.
  7. Top with the other half of the bun, serve immediately, and enjoy your Chili Miso Burger!
