- Firm tofu - 150 grams (drained and pressed)
- Panko breadcrumbs - 50 grams
- Green onion - 2 stalks (finely chopped)
- Garlic - 1 clove (minced)
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
- Burger buns - 2
- Lettuce leaves - 2
- Sliced tomato - 1
- Mayonnaise (optional) - for serving
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Crumble the drained tofu into the bowl with the chickpeas and mix well.
- Add the chopped green onion, minced garlic, soy sauce, sesame oil, cornstarch, salt, and black pepper, and stir until fully combined.
- Gradually mix in the panko breadcrumbs until the mixture holds together but is not too dry.
- Divide the mixture into two equal portions and shape each portion into a burger patty.
- Heat a non-stick skillet over medium heat and add enough vegetable oil to coat the bottom.
- Once the oil is hot, carefully place the patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, lightly toast the burger buns in a separate pan or toaster.
- Assemble the burgers by placing a lettuce leaf and a slice of tomato on the bottom half of each bun, followed by the cooked burger patty and any additional condiments like mayonnaise.
- Top with the other half of the bun and serve immediately.
