- Chicken thighs, boneless - 300 grams
- Soy sauce, low-sodium - 60 ml
- Mirin - 30 ml
- Sake - 30 ml
- Erythritol or another low-carb sweetener - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Green onions, chopped - 2 stalks
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Bamboo skewers - 4 pieces
Steps
- Soak bamboo skewers in water for at least 15 minutes to prevent burning while grilling.
- In a bowl, combine soy sauce, mirin, sake, erythritol, minced garlic, grated ginger, sesame oil, salt, and pepper to create the marinade.
- Cut chicken thighs into bite-sized pieces and add them to the marinade. Cover and refrigerate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread marinated chicken pieces onto soaked bamboo skewers.
- Grill the skewers for about 5-6 minutes on each side, brushing with leftover marinade until the chicken is cooked through and slightly charred.
- Remove from grill and garnish with chopped green onions before serving.
