Ingredients

  • Chicken thighs, boneless - 300 grams
  • Soy sauce, low-sodium - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Erythritol or another low-carb sweetener - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Green onions, chopped - 2 stalks
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Bamboo skewers - 4 pieces

Steps

  1. Soak bamboo skewers in water for at least 15 minutes to prevent burning while grilling.
  2. In a bowl, combine soy sauce, mirin, sake, erythritol, minced garlic, grated ginger, sesame oil, salt, and pepper to create the marinade.
  3. Cut chicken thighs into bite-sized pieces and add them to the marinade. Cover and refrigerate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread marinated chicken pieces onto soaked bamboo skewers.
  6. Grill the skewers for about 5-6 minutes on each side, brushing with leftover marinade until the chicken is cooked through and slightly charred.
  7. Remove from grill and garnish with chopped green onions before serving.
