  • Cornstarch - 2 tablespoons (for dusting)
  • Fresh fruit (like strawberries or mango) - 60 grams (for filling)

Steps

  1. In a bowl, mix the glutinous rice flour, chia seeds, water, maple syrup, and vanilla extract until smooth.
  2. Cover the bowl with plastic wrap and microwave on high for 1 minute.
  3. Stir the mixture, then microwave for an additional 1-2 minutes until it becomes thick and translucent.
  4. Dust a clean surface with cornstarch and transfer the mochi mixture onto it.
  5. Allow it to cool slightly, then divide the mixture into 4 equal pieces.
  6. Flatten each piece into a disc and place a small amount of fresh fruit in the center.
  7. Fold the edges over the fruit to enclose it, rolling gently into a ball shape.
  8. Dust with more cornstarch to prevent sticking and serve at room temperature.
