- Shiitake mushrooms - 50 grams, sliced
- Carrot - 30 grams, finely diced
- Green onion - 1 stalk, finely chopped
- Edamame - 30 grams, shelled
- Salt - a pinch
- White pepper - a pinch
Steps
- Prepare the ingredients by slicing the shiitake mushrooms, dicing the carrot, and chopping the green onion.
- In a bowl, whisk together the eggs, vegetable broth, soy sauce, mirin, salt, and white pepper until well combined.
- Gently blend in the silken tofu using a fork, ensuring there are no large clumps.
- Strain the mixture through a fine sieve into another bowl to achieve a smoother texture.
- Lightly grease two small ramekins with oil and distribute the shiitake mushrooms, carrot, edamame, and green onion evenly between them.
- Pour the egg mixture over the vegetables in the ramekins, filling them about three-quarters full.
- Cover each ramekin with aluminum foil to prevent water from dripping in during steaming.
- Place the ramekins in a steamer basket over boiling water and steam for about 15-20 minutes, or until the custard is set.
- Remove from the steamer and let cool slightly before serving warm.
