Ingredients

  • Silken tofu - 100 grams
  • Vegetable broth - 200 ml
  • Eggs - 2 large
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Shiitake mushrooms - 50 grams, sliced
  • Carrot - 30 grams, finely diced
  • Green onion - 1 stalk, finely chopped
  • Edamame - 30 grams, shelled
  • Salt - a pinch
  • White pepper - a pinch

Steps

  1. Prepare the ingredients by slicing the shiitake mushrooms, dicing the carrot, and chopping the green onion.
  2. In a bowl, whisk together the eggs, vegetable broth, soy sauce, mirin, salt, and white pepper until well combined.
  3. Gently blend in the silken tofu using a fork, ensuring there are no large clumps.
  4. Strain the mixture through a fine sieve into another bowl to achieve a smoother texture.
  5. Lightly grease two small ramekins with oil and distribute the shiitake mushrooms, carrot, edamame, and green onion evenly between them.
  6. Pour the egg mixture over the vegetables in the ramekins, filling them about three-quarters full.
  7. Cover each ramekin with aluminum foil to prevent water from dripping in during steaming.
  8. Place the ramekins in a steamer basket over boiling water and steam for about 15-20 minutes, or until the custard is set.
  9. Remove from the steamer and let cool slightly before serving warm.
