Chawanmushi Custard

Chawanmushi is a delicate Japanese steamed egg custard, infused with umami flavors and filled with a variety of ingredients. This Halal version is both creamy and savory, making it a perfect light lunch dish.

Ingredients

  • Eggs - 2 large
  • Dashi stock - 200 ml
  • Soy sauce - 1 teaspoon
  • Mirin - 1 teaspoon
  • Salt - a pinch
  • Shiitake mushrooms - 2, sliced
  • Carrot - 1 tablespoon, julienned
  • Green onions - 1 tablespoon, finely chopped
  • Chicken breast - 50 grams, cooked and diced
  • Edamame - 2 tablespoons, shelled

Steps

  1. In a bowl, whisk together the eggs, dashi stock, soy sauce, mirin, and a pinch of salt until well combined.
  2. Strain the egg mixture through a fine sieve into another bowl to ensure a smooth custard.
  3. Prepare two small heatproof cups or ramekins. Divide the sliced shiitake mushrooms, julienned carrot, diced chicken, and edamame evenly between the cups.
  4. Gently pour the egg mixture over the ingredients in each cup, filling them about 80% full.
  5. Cover each cup with aluminum foil to prevent water from dripping into the custard during steaming.
  6. Set up a steamer pot over medium heat. Once the water is boiling, place the cups in the steamer and cover with a lid.
  7. Steam for about 15-20 minutes, or until the custard is set and a toothpick inserted into the center comes out clean.
  8. Remove the cups from the steamer and let them cool slightly before serving. Garnish with finely chopped green onions.
