Chawanmushi Custard
Chawanmushi is a delicate Japanese steamed egg custard, infused with umami flavors and filled with a variety of ingredients. This Halal version is both creamy and savory, making it a perfect light lunch dish.

Ingredients
- Eggs - 2 large
- Dashi stock - 200 ml
- Soy sauce - 1 teaspoon
- Mirin - 1 teaspoon
- Salt - a pinch
- Shiitake mushrooms - 2, sliced
- Carrot - 1 tablespoon, julienned
- Green onions - 1 tablespoon, finely chopped
- Chicken breast - 50 grams, cooked and diced
- Edamame - 2 tablespoons, shelled
Steps
- In a bowl, whisk together the eggs, dashi stock, soy sauce, mirin, and a pinch of salt until well combined.
- Strain the egg mixture through a fine sieve into another bowl to ensure a smooth custard.
- Prepare two small heatproof cups or ramekins. Divide the sliced shiitake mushrooms, julienned carrot, diced chicken, and edamame evenly between the cups.
- Gently pour the egg mixture over the ingredients in each cup, filling them about 80% full.
- Cover each cup with aluminum foil to prevent water from dripping into the custard during steaming.
- Set up a steamer pot over medium heat. Once the water is boiling, place the cups in the steamer and cover with a lid.
- Steam for about 15-20 minutes, or until the custard is set and a toothpick inserted into the center comes out clean.
- Remove the cups from the steamer and let them cool slightly before serving. Garnish with finely chopped green onions.
