Ingredients

  • Eggs - 2 large
  • Dashi stock - 200 ml
  • Soy sauce (Halal) - 1 tablespoon
  • Mirin - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Shiitake mushrooms - 30 grams, sliced
  • Carrot - 30 grams, diced
  • Frozen peas - 30 grams
  • Green onion - 1 tablespoon, chopped
  • Chicken breast (Halal) - 50 grams, cooked and shredded

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a mixing bowl, whisk together the eggs, dashi stock, soy sauce, mirin, and salt until well combined.
  3. In individual ramekins, evenly distribute the shiitake mushrooms, diced carrot, peas, green onion, and shredded chicken.
  4. Pour the egg mixture evenly over the fillings in the ramekins.
  5. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  6. Bake in the preheated oven for 20-25 minutes or until the custard is set and a toothpick inserted comes out clean.
  7. Remove from the oven and let cool slightly before serving.
