- Eggs - 2 large
- Dashi stock - 200 ml
- Soy sauce (Halal) - 1 tablespoon
- Mirin - 1 teaspoon
- Salt - 1/4 teaspoon
- Shiitake mushrooms - 30 grams, sliced
- Carrot - 30 grams, diced
- Frozen peas - 30 grams
- Green onion - 1 tablespoon, chopped
- Chicken breast (Halal) - 50 grams, cooked and shredded
Steps
- Preheat the oven to 160°C (320°F).
- In a mixing bowl, whisk together the eggs, dashi stock, soy sauce, mirin, and salt until well combined.
- In individual ramekins, evenly distribute the shiitake mushrooms, diced carrot, peas, green onion, and shredded chicken.
- Pour the egg mixture evenly over the fillings in the ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 20-25 minutes or until the custard is set and a toothpick inserted comes out clean.
- Remove from the oven and let cool slightly before serving.
