Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Garlic - 2 cloves, minced
  • Ginger - 1-inch piece, sliced
  • Green onions - 2, chopped
  • Cooked rice - 300 grams
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, combine soy sauce, mirin, sake, brown sugar, minced garlic, and sliced ginger to make the marinade.
  2. Place the pork belly in a zip-lock bag and pour the marinade over it. Seal the bag and marinate in the refrigerator for at least 1 hour, preferably overnight.
  3. Preheat the oven to 150°C (300°F).
  4. Remove the pork from the marinade and place it in a baking dish. Pour the marinade over the pork and cover with aluminum foil.
  5. Bake in the preheated oven for about 90 minutes, or until the pork is tender.
  6. Once cooked, let the pork rest for 10 minutes before slicing it into thin pieces.
  7. In a pan, heat sesame oil over medium heat. Add the cooked rice and stir-fry for 2-3 minutes until heated through. Season with salt and pepper to taste.
  8. To serve, place a generous portion of rice on each plate, top with slices of chashu pork, and garnish with chopped green onions.
