Chashu Pork Rice

Ingredients
- Pork belly - 300 grams
- Soy sauce - 60 ml
- Mirin - 30 ml
- Sake - 30 ml
- Brown sugar - 1 tablespoon (15 grams)
- Garlic - 2 cloves, minced
- Ginger - 1-inch piece, sliced
- Green onions - 2, chopped
- Cooked rice - 300 grams
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, combine soy sauce, mirin, sake, brown sugar, minced garlic, and sliced ginger to make the marinade.
- Place the pork belly in a zip-lock bag and pour the marinade over it. Seal the bag and marinate in the refrigerator for at least 1 hour, preferably overnight.
- Preheat the oven to 150°C (300°F).
- Remove the pork from the marinade and place it in a baking dish. Pour the marinade over the pork and cover with aluminum foil.
- Bake in the preheated oven for about 90 minutes, or until the pork is tender.
- Once cooked, let the pork rest for 10 minutes before slicing it into thin pieces.
- In a pan, heat sesame oil over medium heat. Add the cooked rice and stir-fry for 2-3 minutes until heated through. Season with salt and pepper to taste.
- To serve, place a generous portion of rice on each plate, top with slices of chashu pork, and garnish with chopped green onions.
