Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Sugar - 15 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Ground black pepper - 1/2 teaspoon
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Wasabi mayo - 2 tablespoons
  • Green onions - 1, chopped

Steps

  1. In a pot, combine soy sauce, mirin, sake, sugar, garlic, ginger, and ground black pepper. Bring to a simmer over medium heat.
  2. Add the pork belly to the pot and ensure it is submerged in the sauce. Cover and simmer for about 1.5 hours, turning occasionally.
  3. Once the pork is tender, remove it from the pot and allow it to cool slightly. Reserve the cooking liquid.
  4. Preheat a grill or skillet over medium heat. Slice the pork belly into 2 thick pieces.
  5. Grill the pork belly slices for about 3-4 minutes on each side until caramelized.
  6. Toast the burger buns lightly on the grill or in a toaster.
  7. Spread wasabi mayo on the bottom half of each bun. Layer with lettuce, grilled chashu pork, tomato slices, and chopped green onions.
  8. Top with the other half of the bun, serve immediately, and enjoy your Chashu Pork Burger!
