Ingredients
- Pork belly - 300 grams
- Soy sauce - 60 ml
- Mirin - 30 ml
- Sake - 30 ml
- Sugar - 15 grams
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Ground black pepper - 1/2 teaspoon
- Burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Wasabi mayo - 2 tablespoons
- Green onions - 1, chopped
Steps
- In a pot, combine soy sauce, mirin, sake, sugar, garlic, ginger, and ground black pepper. Bring to a simmer over medium heat.
- Add the pork belly to the pot and ensure it is submerged in the sauce. Cover and simmer for about 1.5 hours, turning occasionally.
- Once the pork is tender, remove it from the pot and allow it to cool slightly. Reserve the cooking liquid.
- Preheat a grill or skillet over medium heat. Slice the pork belly into 2 thick pieces.
- Grill the pork belly slices for about 3-4 minutes on each side until caramelized.
- Toast the burger buns lightly on the grill or in a toaster.
- Spread wasabi mayo on the bottom half of each bun. Layer with lettuce, grilled chashu pork, tomato slices, and chopped green onions.
- Top with the other half of the bun, serve immediately, and enjoy your Chashu Pork Burger!
