- Halal pork belly - 300 grams
- Soy sauce - 60 ml
- Mirin - 30 ml
- Sake - 30 ml
- Brown sugar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, sliced
- Cooked rice - 300 grams (about 1.5 cups)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- In a medium bowl, mix soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger to create the marinade.
- Place the pork belly in a resealable plastic bag and pour the marinade over it. Seal the bag, ensuring the pork is well-coated, and refrigerate for at least 30 minutes or overnight for best results.
- Preheat your oven to 150°C (300°F).
- Remove the pork from the marinade and place it in a baking dish. Pour half of the marinade over the pork and cover with foil.
- Bake in the preheated oven for 60 minutes, basting occasionally with the remaining marinade.
- After 60 minutes, remove the foil and increase the oven temperature to 200°C (400°F). Bake for an additional 15 minutes to caramelize the top.
- While the pork is baking, prepare the rice according to package instructions.
- Once cooked, slice the pork belly into thin pieces.
- To serve, divide the cooked rice between two bowls, top with sliced chashu, and drizzle with remaining tare sauce. Garnish with sliced green onions and sesame seeds.
