Ingredients

  • Halal pork belly - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Brown sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, sliced
  • Cooked rice - 300 grams (about 1.5 cups)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a medium bowl, mix soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger to create the marinade.
  2. Place the pork belly in a resealable plastic bag and pour the marinade over it. Seal the bag, ensuring the pork is well-coated, and refrigerate for at least 30 minutes or overnight for best results.
  3. Preheat your oven to 150°C (300°F).
  4. Remove the pork from the marinade and place it in a baking dish. Pour half of the marinade over the pork and cover with foil.
  5. Bake in the preheated oven for 60 minutes, basting occasionally with the remaining marinade.
  6. After 60 minutes, remove the foil and increase the oven temperature to 200°C (400°F). Bake for an additional 15 minutes to caramelize the top.
  7. While the pork is baking, prepare the rice according to package instructions.
  8. Once cooked, slice the pork belly into thin pieces.
  9. To serve, divide the cooked rice between two bowls, top with sliced chashu, and drizzle with remaining tare sauce. Garnish with sliced green onions and sesame seeds.
