Ingredients

  • Pork belly - 400 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Brown sugar substitute (erythritol) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Lettuce leaves (for wrapping) - 4 large leaves
  • Green onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Mayonnaise (keto-friendly) - 2 tablespoons
  • Pickled ginger - 30 grams

Steps

  1. In a bowl, mix the soy sauce, mirin, sake, brown sugar substitute, minced garlic, and grated ginger to create the marinade.
  2. Place the pork belly in a resealable bag or a shallow dish and pour the marinade over it, ensuring it is well-coated. Let it marinate in the refrigerator for at least 2 hours, preferably overnight.
  3. Preheat your oven to 150°C (300°F). Remove the pork from the marinade and place it in a baking dish. Reserve the marinade for later.
  4. Cover the pork belly tightly with foil and bake in the preheated oven for about 2 hours until tender.
  5. After 2 hours, remove the foil and pour the reserved marinade over the pork. Increase the oven temperature to 200°C (400°F) and bake for an additional 30 minutes, basting occasionally, until the pork is caramelized and crispy on the outside.
  6. Once cooked, let the pork belly rest for 10 minutes before slicing it into thick pieces.
  7. To assemble the burgers, take two large lettuce leaves and spread a tablespoon of mayonnaise on each. Layer with sliced chashu, chopped green onions, and pickled ginger.
  8. Top with another lettuce leaf and serve immediately.
