Ingredients
- Pork belly - 400 grams
- Soy sauce - 60 ml
- Mirin - 30 ml
- Sake - 30 ml
- Brown sugar substitute (erythritol) - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Lettuce leaves (for wrapping) - 4 large leaves
- Green onions - 2, chopped
- Sesame oil - 1 tablespoon
- Mayonnaise (keto-friendly) - 2 tablespoons
- Pickled ginger - 30 grams
Steps
- In a bowl, mix the soy sauce, mirin, sake, brown sugar substitute, minced garlic, and grated ginger to create the marinade.
- Place the pork belly in a resealable bag or a shallow dish and pour the marinade over it, ensuring it is well-coated. Let it marinate in the refrigerator for at least 2 hours, preferably overnight.
- Preheat your oven to 150°C (300°F). Remove the pork from the marinade and place it in a baking dish. Reserve the marinade for later.
- Cover the pork belly tightly with foil and bake in the preheated oven for about 2 hours until tender.
- After 2 hours, remove the foil and pour the reserved marinade over the pork. Increase the oven temperature to 200°C (400°F) and bake for an additional 30 minutes, basting occasionally, until the pork is caramelized and crispy on the outside.
- Once cooked, let the pork belly rest for 10 minutes before slicing it into thick pieces.
- To assemble the burgers, take two large lettuce leaves and spread a tablespoon of mayonnaise on each. Layer with sliced chashu, chopped green onions, and pickled ginger.
- Top with another lettuce leaf and serve immediately.
