Ingredients

  • Pork belly - 400 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Sugar - 15 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Green onions - 2 stalks, chopped (for garnish)
  • Sesame oil - 1 teaspoon

Steps

  1. In a pot, combine soy sauce, mirin, sake, sugar, minced garlic, and grated ginger to create the braising liquid.
  2. Bring the mixture to a simmer over medium heat until the sugar dissolves.
  3. Add the pork belly to the pot, ensuring it is fully submerged in the liquid.
  4. Cover the pot and reduce the heat to low, allowing the pork to braise for 2 to 2.5 hours until it becomes tender.
  5. Once cooked, remove the pork belly and let it cool slightly before slicing it into thin pieces.
  6. Heat sesame oil in a pan over medium heat and briefly sear the sliced pork belly until it is caramelized on the edges.
  7. Serve the chashu warm, garnished with chopped green onions.
