- Cauliflower - 300 grams
- Rice vinegar - 2 tablespoons
- Stevia or sugar substitute - 1 teaspoon
- Nori sheets - 4 sheets
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Avocado - 1 medium, sliced
- Soy sauce - for dipping
- Sesame seeds - 1 tablespoon
- Wasabi - optional, for serving
Steps
- Start by washing the cauliflower and removing the leaves and stem. Cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains.
- Transfer the cauliflower rice to a clean kitchen towel and squeeze out any excess moisture.
- In a small bowl, mix the rice vinegar and stevia. Pour this mixture over the cauliflower rice and stir well to combine.
- Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and take half of the cauliflower rice mixture, spreading it evenly over the nori, leaving about 2 cm at the top edge.
- Place a few julienned cucumber, carrot, and slices of avocado in a line along the bottom edge of the cauliflower rice.
- Using the sushi mat, carefully roll the nori away from you, pressing gently but firmly to keep the filling intact. Seal the edge with a little water.
- Repeat the process with the remaining ingredients to make another sushi roll.
- Using a sharp knife, slice each roll into bite-sized pieces and sprinkle sesame seeds on top.
- Serve with soy sauce and wasabi, if desired.
