Ingredients

  • Cauliflower - 300 grams
  • Rice vinegar - 2 tablespoons
  • Stevia or sugar substitute - 1 teaspoon
  • Nori sheets - 4 sheets
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Avocado - 1 medium, sliced
  • Soy sauce - for dipping
  • Sesame seeds - 1 tablespoon
  • Wasabi - optional, for serving

Steps

  1. Start by washing the cauliflower and removing the leaves and stem. Cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains.
  3. Transfer the cauliflower rice to a clean kitchen towel and squeeze out any excess moisture.
  4. In a small bowl, mix the rice vinegar and stevia. Pour this mixture over the cauliflower rice and stir well to combine.
  5. Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and take half of the cauliflower rice mixture, spreading it evenly over the nori, leaving about 2 cm at the top edge.
  6. Place a few julienned cucumber, carrot, and slices of avocado in a line along the bottom edge of the cauliflower rice.
  7. Using the sushi mat, carefully roll the nori away from you, pressing gently but firmly to keep the filling intact. Seal the edge with a little water.
  8. Repeat the process with the remaining ingredients to make another sushi roll.
  9. Using a sharp knife, slice each roll into bite-sized pieces and sprinkle sesame seeds on top.
  10. Serve with soy sauce and wasabi, if desired.
