Ingredients

  • Cauliflower - 400 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 small, diced
  • Mushrooms - 100 grams, sliced
  • Egg - 2 large
  • Cooked chicken breast - 150 grams, shredded
  • Frozen peas - 50 grams
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Begin by prepping the cauliflower: remove the leaves and core, then cut into florets and pulse in a food processor until it resembles rice.
  2. In a large skillet, heat sesame oil over medium heat. Add the garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add the carrots, bell pepper, and mushrooms to the skillet, cooking for about 5 minutes until they start to soften.
  4. Stir in the cauliflower rice and soy sauce, mixing well. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  5. Push the cauliflower rice mixture to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked, then mix them into the cauliflower rice.
  6. Fold in the shredded chicken and frozen peas, cooking for another 2-3 minutes until heated through. Season with salt and pepper to taste.
  7. Serve the cauliflower rice donburi in bowls, garnished with chopped green onions and sesame seeds.
