Ingredients

  • Cauliflower - 300 grams, riced
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large, beaten
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Soy sauce - 1 tablespoon
  • Ground pork or chicken - 100 grams
  • Green onion - 2 tablespoons, finely chopped
  • Mushrooms - 50 grams, finely chopped
  • Bell pepper - 50 grams, diced
  • Sesame oil - 1 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)
  • Pizza sauce - 100 grams (sugar-free, for topping)
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a microwave-safe bowl, steam the riced cauliflower for 5 minutes until tender. Let it cool slightly.
  3. Once cooled, place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a large mixing bowl, combine the squeezed cauliflower, mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  5. Spread the mixture evenly onto a parchment-lined baking sheet to form a round pizza crust, about 1 cm thick.
  6. Bake the crust in the preheated oven for 20 minutes or until golden and firm.
  7. While the crust is baking, heat sesame oil in a skillet over medium heat. Add the ground pork or chicken, mushrooms, and bell pepper. Stir-fry until the meat is cooked through and the vegetables are tender, about 5-7 minutes.
  8. Add the soy sauce, green onion, and chili flakes (if using) to the meat mixture, stirring to combine. Remove from heat.
  9. Once the crust is done baking, spread the pizza sauce evenly over the top, then layer the cooked meat and vegetable mixture on top.
  10. Return the pizza to the oven and bake for an additional 10 minutes.
  11. Remove from the oven, let cool for a few minutes, then garnish with fresh cilantro before slicing and serving.
