Ingredients
- Pork belly - 500 grams
- Soy sauce - 60 ml
- Sake - 60 ml
- Mirin - 30 ml
- Sugar - 1 tablespoon
- Ginger - 1 piece (about 20 grams), sliced
- Green onions - 2, chopped
- Water - 500 ml
- Hard-boiled eggs - 2, for serving
- Cooked rice - 200 grams, for serving
Steps
- Cut the pork belly into 3 cm cubes and set aside.
- In a large pot, combine the soy sauce, sake, mirin, sugar, ginger, and water. Stir to mix well.
- Add the pork belly cubes to the pot and bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 90 minutes until the pork is tender.
- Occasionally check and skim off any excess fat that rises to the surface.
- After 90 minutes, uncover the pot and increase the heat to medium-high to reduce the sauce for about 15-20 minutes until it thickens slightly.
- Add the chopped green onions during the last 5 minutes of cooking.
- Serve the Buta Kakuni hot, garnished with hard-boiled eggs and alongside cooked rice.
