Ingredients

  • Pork belly - 500 grams
  • Soy sauce - 60 ml
  • Sake - 60 ml
  • Mirin - 30 ml
  • Sugar - 1 tablespoon
  • Ginger - 1 piece (about 20 grams), sliced
  • Green onions - 2, chopped
  • Water - 500 ml
  • Hard-boiled eggs - 2, for serving
  • Cooked rice - 200 grams, for serving

Steps

  1. Cut the pork belly into 3 cm cubes and set aside.
  2. In a large pot, combine the soy sauce, sake, mirin, sugar, ginger, and water. Stir to mix well.
  3. Add the pork belly cubes to the pot and bring to a boil over medium heat.
  4. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 90 minutes until the pork is tender.
  5. Occasionally check and skim off any excess fat that rises to the surface.
  6. After 90 minutes, uncover the pot and increase the heat to medium-high to reduce the sauce for about 15-20 minutes until it thickens slightly.
  7. Add the chopped green onions during the last 5 minutes of cooking.
  8. Serve the Buta Kakuni hot, garnished with hard-boiled eggs and alongside cooked rice.
