  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, finely diced
  • Celery - 1 stalk, finely diced
  • Canned crushed tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Oregano - 1 teaspoon
  • Basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - for serving (optional)
  • Fresh basil leaves - for garnish (optional)

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
  3. Add minced garlic, diced carrot, and diced celery to the skillet. Cook for an additional 3-4 minutes until vegetables are softened.
  4. Increase the heat to medium-high and add the ground halal beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  5. Stir in the crushed tomatoes, tomato paste, soy sauce, oregano, basil, salt, and black pepper. Bring the mixture to a simmer and let it cook for 10-15 minutes, stirring occasionally.
  6. Once the sauce has thickened, reduce heat to low and add the cooked udon noodles to the skillet. Toss to combine and heat through for 2-3 minutes.
  7. Serve hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.
