Ingredients

  • Cooked white rice - 150g
  • Eggs - 2 large
  • Spinach - 50g
  • Carrot - 1 medium, julienned
  • Cherry tomatoes - 6, halved
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black sesame seeds - 1 teaspoon
  • Nori sheets - 2 pieces, cut into strips

Steps

  1. Cook the white rice according to the package instructions and keep warm.
  2. In a pan, heat sesame oil over medium heat and sauté the spinach and julienned carrot for about 3-4 minutes until tender. Season with a pinch of salt and set aside.
  3. In a non-stick skillet, crack the eggs and cook sunny-side up for about 3-4 minutes until the whites are set but yolks are still runny.
  4. Assemble the bento box: in one compartment, place the cooked rice; in another, add the sautéed vegetables; and in the final compartment, gently place the cooked eggs on top.
  5. Garnish the vegetables with cherry tomatoes and sprinkle black sesame seeds on the rice. Add nori strips for an additional touch.
  6. Drizzle soy sauce over the rice before serving.
