- beef tenderloin - 200 grams
- sea salt - 1/2 teaspoon

- garlic - 1 clove, minced
- lime juice - 1 tablespoon
- coconut aminos - 2 tablespoons

Steps
- Trim any excess fat from the beef tenderloin and season it with sea salt and black pepper.
- In a skillet, heat the coconut oil over high heat until it is shimmering.
- Sear the beef tenderloin for 1-2 minutes on each side until a crust forms, but the center remains rare.
- Remove the beef from the skillet and let it rest for at least 5 minutes.
- While the beef is resting, prepare the ponzu sauce by mixing lime juice, coconut aminos, ginger, and garlic in a small bowl.
- Slice the rested beef thinly against the grain and arrange it on a plate.
