- Ginger - 1 teaspoon, grated
- Sesame seeds - 1 tablespoon (8g)
- Green onions - 1 tablespoon, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Wash and slice the zucchini into 1/2-inch thick rounds.
- In a small bowl, mix together the miso paste, soy sauce, sesame oil, honey or maple syrup, minced garlic, and grated ginger until well combined.
- Place the zucchini slices on a baking sheet lined with parchment paper.
- Brush the miso mixture generously over the zucchini slices, ensuring they are well coated.
- Sprinkle sesame seeds over the top of the zucchini slices.
- Bake in the preheated oven for 20 minutes, or until the zucchini is tender and slightly caramelized.
