  • Sesame oil - 1 tablespoon (15ml)
  • Honey or maple syrup - 1 teaspoon (5g)
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Sesame seeds - 1 tablespoon (8g)
  • Green onions - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and slice the zucchini into 1/2-inch thick rounds.
  3. In a small bowl, mix together the miso paste, soy sauce, sesame oil, honey or maple syrup, minced garlic, and grated ginger until well combined.
  4. Place the zucchini slices on a baking sheet lined with parchment paper.
  5. Brush the miso mixture generously over the zucchini slices, ensuring they are well coated.
  6. Sprinkle sesame seeds over the top of the zucchini slices.
  7. Bake in the preheated oven for 20 minutes, or until the zucchini is tender and slightly caramelized.
