Ingredients
- Yuba (tofu skin) - 4 sheets
- Shitake mushrooms (finely chopped) - 100 grams
- Carrot (grated) - 50 grams
- Spinach (cooked and chopped) - 50 grams
- Garlic (minced) - 1 clove
- Ginger (minced) - 1 teaspoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Egg (beaten) - 1
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat sesame oil over medium heat and sauté the minced garlic and ginger until fragrant.
- Add the chopped shitake mushrooms, grated carrot, and cooked spinach, cooking until soft. Season with soy sauce, salt, and pepper, then remove from heat.
- Lay a sheet of yuba on a clean surface and place a spoonful of the vegetable filling near one edge.
- Roll the yuba tightly around the filling, tucking in the sides as you go, to form a roll. Repeat with the remaining sheets and filling.
- Place the rolled yuba on a baking tray lined with parchment paper. Brush the tops with the beaten egg.
- Bake in the preheated oven for about 15-20 minutes, or until the rolls are golden brown.
- Remove from the oven and let cool slightly before serving.
