Ingredients

  • Yuba (tofu skin) - 4 sheets
  • Shitake mushrooms (finely chopped) - 100 grams
  • Carrot (grated) - 50 grams
  • Spinach (cooked and chopped) - 50 grams
  • Garlic (minced) - 1 clove
  • Ginger (minced) - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Egg (beaten) - 1

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat sesame oil over medium heat and sauté the minced garlic and ginger until fragrant.
  3. Add the chopped shitake mushrooms, grated carrot, and cooked spinach, cooking until soft. Season with soy sauce, salt, and pepper, then remove from heat.
  4. Lay a sheet of yuba on a clean surface and place a spoonful of the vegetable filling near one edge.
  5. Roll the yuba tightly around the filling, tucking in the sides as you go, to form a roll. Repeat with the remaining sheets and filling.
  6. Place the rolled yuba on a baking tray lined with parchment paper. Brush the tops with the beaten egg.
  7. Bake in the preheated oven for about 15-20 minutes, or until the rolls are golden brown.
  8. Remove from the oven and let cool slightly before serving.
