Ingredients

  • Boneless chicken thighs - 250 grams (cut into bite-sized pieces)
  • Soy sauce - 2 tablespoons
  • Sake (or rice vinegar) - 1 tablespoon
  • Mirin - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Green onions - 2 (chopped)
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove (minced)
  • Ginger - 1 teaspoon (grated)
  • Mixed vegetables (carrots, bell peppers, and mushrooms) - 100 grams (chopped)
  • Puff pastry - 1 sheet (thawed)
  • Egg - 1 (beaten, for egg wash)
  • Sesame seeds - 1 tablespoon (for topping)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the soy sauce, sake, mirin, brown sugar, minced garlic, and grated ginger to make the yakitori marinade.
  3. Add the chicken pieces to the marinade and let them soak for about 15 minutes.
  4. In a skillet, heat sesame oil over medium heat. Add the marinated chicken (discard excess marinade) and sauté until cooked through, about 5-7 minutes.
  5. Add the chopped mixed vegetables to the skillet and cook for an additional 5 minutes until softened. Stir in the chopped green onions and remove from heat.
  6. Roll out the puff pastry on a lightly floured surface to fit a small pie dish. Place half of the pastry in the dish, allowing the edges to hang over.
  7. Fill the pie shell with the chicken and vegetable mixture evenly.
  8. Cover the filling with the other half of the puff pastry, sealing the edges by crimping with a fork. Cut a few slits in the top to allow steam to escape.
  9. Brush the top with the beaten egg and sprinkle sesame seeds over it.
  10. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
  11. Remove from the oven and let it cool for a few minutes before slicing and serving.
