  • Mirin (Kosher) - 30 ml
  • Sake (Kosher) - 30 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Garlic, minced - 1 clove
  • Ginger, grated - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Green onions, chopped - 2 stalks
  • Sesame seeds, toasted - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix together soy sauce, mirin, sake, brown sugar, minced garlic, grated ginger, and sesame oil to create the marinade.
  3. Cut the chicken thighs into bite-sized pieces and add them to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. Line a baking dish with parchment paper and arrange the marinated chicken pieces evenly in the dish.
