Ingredients

  • Chicken breast - 300 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Brown sugar - 15 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger to create the marinade.
  3. Cut the chicken breast into 2.5 cm cubes and add to the marinade. Let it marinate for at least 15 minutes.
  4. While the chicken is marinating, prepare a baking tray lined with parchment paper.
  5. Skewer the marinated chicken onto wooden or metal skewers, leaving some space between each piece.
  6. Place the skewers on the prepared baking tray and sprinkle with salt and pepper to taste.
  7. Bake in the preheated oven for about 15 minutes, turning halfway through, until the chicken is cooked through and slightly caramelized.
  8. Remove from the oven and sprinkle with chopped green onions and sesame seeds before serving.
