- Udon noodles - 200 grams
- Chicken breast (halal) - 150 grams, diced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Broccoli florets - 100 grams
- Cheddar cheese - 100 grams, grated
- Mozzarella cheese - 50 grams, grated
- Milk - 200 ml
- Butter - 30 grams
- All-purpose flour - 20 grams
- Soy sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
- Breadcrumbs - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a skillet, heat olive oil over medium heat. Add diced chicken and cook until browned, about 5-7 minutes.
- Add minced garlic and sliced mushrooms to the skillet, cooking for an additional 3-4 minutes until the mushrooms are tender.
- Stir in the broccoli florets, soy sauce, salt, and black pepper, cooking for another 2-3 minutes until the broccoli is bright green. Remove from heat.
- In a saucepan, melt butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
- Slowly add the milk while whisking constantly to avoid lumps. Cook until the sauce thickens, about 4-5 minutes.
- Remove the sauce from heat and stir in half of the cheddar and all the mozzarella cheese until melted and smooth.
- In a large mixing bowl, combine the cooked udon noodles, chicken-mushroom-broccoli mixture, and cheese sauce. Mix well to coat evenly.
- Transfer the mixture to a baking dish, spreading it out evenly. Top with the remaining cheddar cheese and breadcrumbs.
- Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbly.
- Remove from the oven and let it cool slightly before serving.
