Ingredients

  • Udon noodles - 200 grams
  • Chicken breast (halal) - 150 grams, diced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Broccoli florets - 100 grams
  • Cheddar cheese - 100 grams, grated
  • Mozzarella cheese - 50 grams, grated
  • Milk - 200 ml
  • Butter - 30 grams
  • All-purpose flour - 20 grams
  • Soy sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Breadcrumbs - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the udon noodles according to package instructions, then drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add diced chicken and cook until browned, about 5-7 minutes.
  4. Add minced garlic and sliced mushrooms to the skillet, cooking for an additional 3-4 minutes until the mushrooms are tender.
  5. Stir in the broccoli florets, soy sauce, salt, and black pepper, cooking for another 2-3 minutes until the broccoli is bright green. Remove from heat.
  6. In a saucepan, melt butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
  7. Slowly add the milk while whisking constantly to avoid lumps. Cook until the sauce thickens, about 4-5 minutes.
  8. Remove the sauce from heat and stir in half of the cheddar and all the mozzarella cheese until melted and smooth.
  9. In a large mixing bowl, combine the cooked udon noodles, chicken-mushroom-broccoli mixture, and cheese sauce. Mix well to coat evenly.
  10. Transfer the mixture to a baking dish, spreading it out evenly. Top with the remaining cheddar cheese and breadcrumbs.
  11. Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbly.
  12. Remove from the oven and let it cool slightly before serving.
