Ingredients
- Firm tofu - 300 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cornstarch - 2 tablespoons
- Mixed salad greens - 100 grams
- Cucumber - 1 medium, sliced
- Cherry tomatoes - 150 grams, halved
- Radishes - 4, thinly sliced
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Honey or maple syrup - 1 teaspoon
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Press the tofu for about 15 minutes to remove excess moisture, then cut it into 1.5 cm cubes.
- In a bowl, mix the soy sauce, sesame oil, minced garlic, and grated ginger.
- Add the tofu cubes to the marinade and let them sit for 10 minutes.
- Sprinkle cornstarch over the marinated tofu and gently toss to coat each piece evenly.
- Place the tofu cubes on a baking sheet lined with parchment paper and bake for 25 minutes, flipping halfway through, until golden and crispy.
- While the tofu is baking, prepare the salad by combining the mixed salad greens, sliced cucumber, cherry tomatoes, radishes, and green onions in a large bowl.
- In a small bowl, whisk together rice vinegar, honey or maple syrup, and black pepper to create the dressing.
- Once the tofu is done, let it cool slightly before adding it to the salad.
- Drizzle the dressing over the salad, sprinkle with sesame seeds, and toss gently to combine.
