Ingredients
- Firm tofu - 200 grams
- Fresh spinach - 150 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame seeds - 1 tablespoon (for garnish)
- Green onions - 2, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Drain the tofu and press it gently between paper towels to remove excess moisture. Cut the tofu into 1.5 cm cubes.
- In a bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, salt, and black pepper. Add the tofu cubes and toss to coat evenly.
- Spread the marinated tofu on a baking sheet lined with parchment paper and bake for 15 minutes.
- While the tofu is baking, heat a non-stick skillet over medium heat. Add the fresh spinach and sauté until wilted, about 3-5 minutes. Remove from heat.
- Once the tofu is done, remove it from the oven and gently fold in the sautéed spinach.
- Return the mixture to the oven and bake for an additional 5 minutes to heat through.
- Remove from the oven, garnish with sesame seeds and chopped green onions, and serve immediately.
