Ingredients

  • Firm tofu - 200 grams
  • Fresh spinach - 150 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 2, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Drain the tofu and press it gently between paper towels to remove excess moisture. Cut the tofu into 1.5 cm cubes.
  3. In a bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, salt, and black pepper. Add the tofu cubes and toss to coat evenly.
  4. Spread the marinated tofu on a baking sheet lined with parchment paper and bake for 15 minutes.
  5. While the tofu is baking, heat a non-stick skillet over medium heat. Add the fresh spinach and sauté until wilted, about 3-5 minutes. Remove from heat.
  6. Once the tofu is done, remove it from the oven and gently fold in the sautéed spinach.
  7. Return the mixture to the oven and bake for an additional 5 minutes to heat through.
  8. Remove from the oven, garnish with sesame seeds and chopped green onions, and serve immediately.
