- Chicken breast - 300 grams
- Soy sauce - 60 ml
- Honey - 30 grams
- Rice vinegar - 15 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 teaspoon
- Cornstarch - 1 teaspoon
- Water - 60 ml
- Broccoli - 150 grams, cut into florets
- Carrot - 1 medium, sliced
- Green onion - 2 stalks, chopped
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, cornstarch, and water to create the teriyaki marinade.
- Place the chicken breast in a baking dish and pour half of the teriyaki marinade over it, ensuring the chicken is well coated. Marinate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by steaming the broccoli and carrots until just tender, about 5-7 minutes.
- After marinating, bake the chicken in the preheated oven for 20-25 minutes, or until fully cooked (internal temperature should reach 75°C or 165°F).
- In the last 5 minutes of baking, add the steamed vegetables around the chicken in the baking dish and drizzle the remaining teriyaki marinade over the top.
- Once cooked, remove the chicken from the oven, let it rest for a few minutes, then slice and serve garnished with chopped green onions and sesame seeds.
