Ingredients

  • Chicken breast - 300 grams
  • Soy sauce - 60 ml
  • Honey - 30 grams
  • Rice vinegar - 15 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Cornstarch - 1 teaspoon
  • Water - 60 ml
  • Broccoli - 150 grams, cut into florets
  • Carrot - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, cornstarch, and water to create the teriyaki marinade.
  3. Place the chicken breast in a baking dish and pour half of the teriyaki marinade over it, ensuring the chicken is well coated. Marinate for at least 15 minutes.
  4. While the chicken is marinating, prepare the vegetables by steaming the broccoli and carrots until just tender, about 5-7 minutes.
  5. After marinating, bake the chicken in the preheated oven for 20-25 minutes, or until fully cooked (internal temperature should reach 75°C or 165°F).
  6. In the last 5 minutes of baking, add the steamed vegetables around the chicken in the baking dish and drizzle the remaining teriyaki marinade over the top.
  7. Once cooked, remove the chicken from the oven, let it rest for a few minutes, then slice and serve garnished with chopped green onions and sesame seeds.
