- all-purpose flour - 100 grams
- eggs - 2 large
- dashi stock - 250 ml
- cooked octopus (diced) - 100 grams
- green onions (chopped) - 30 grams
- pickled ginger (chopped) - 20 grams
- soy sauce - 1 tablespoon
- baking powder - 1 teaspoon
- salt - 1/2 teaspoon
- olive oil - 1 tablespoon
- takoyaki sauce - for drizzling
- mayonnaise - for drizzling
- bonito flakes - for garnish
- nori flakes - for garnish
Steps
- Preheat your oven to 200°C (392°F) and grease a muffin tin with olive oil.
- In a mixing bowl, combine the all-purpose flour, baking powder, and salt.
- In another bowl, whisk together the eggs and dashi stock until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the diced octopus, chopped green onions, and pickled ginger into the batter.
- Pour the batter into the greased muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
- Remove from the oven and let cool for a few minutes before gently removing the baked takoyaki from the tin.
- Drizzle with takoyaki sauce and mayonnaise, and sprinkle bonito flakes and nori flakes on top before serving.
