Ingredients

  • Japanese sweet potatoes - 400 grams
  • White miso paste - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Chopped green onions - 2 tablespoons
  • Sea salt - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the Japanese sweet potatoes thoroughly and pat them dry.
  3. Prick the sweet potatoes with a fork to allow steam to escape during baking.
  4. Place the sweet potatoes on a baking sheet lined with parchment paper and bake for 30-35 minutes, or until tender when pierced with a fork.
  5. While the sweet potatoes are baking, mix the white miso paste and olive oil in a small bowl to create a smooth dressing.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  7. Cut the sweet potatoes in half lengthwise and drizzle the miso dressing over the flesh.
