- Rice vinegar - 1 teaspoon
- Garlic (minced) - 1 clove
- Sesame oil - 1 teaspoon
- Chili flakes - 1/4 teaspoon
- Sesame seeds (for topping) - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Wash the fresh spinach thoroughly and remove any tough stems.
- In a large pot, bring water to a boil and blanch the spinach for about 1-2 minutes until wilted. Drain and cool under cold water, then squeeze out excess moisture.
- In a bowl, combine sesame paste, soy sauce, rice vinegar, minced garlic, sesame oil, and chili flakes. Mix well to form a creamy sauce.
- Chop the blanched spinach and add it to the sauce. Mix until the spinach is well coated.
- Transfer the spinach mixture to a baking dish, spreading it evenly.
- Sprinkle sesame seeds on top and season with salt and pepper to taste.
- Bake in the preheated oven for 15-20 minutes, or until heated through and slightly browned on top.
- Remove from the oven and let it cool slightly before serving.
