Ingredients

  • Fresh spinach - 200 grams
  • Sesame paste (tahini) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Sesame oil - 1 teaspoon
  • Chili flakes - 1/4 teaspoon
  • Sesame seeds (for topping) - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash the fresh spinach thoroughly and remove any tough stems.
  3. In a large pot, bring water to a boil and blanch the spinach for about 1-2 minutes until wilted. Drain and cool under cold water, then squeeze out excess moisture.
  4. In a bowl, combine sesame paste, soy sauce, rice vinegar, minced garlic, sesame oil, and chili flakes. Mix well to form a creamy sauce.
  5. Chop the blanched spinach and add it to the sauce. Mix until the spinach is well coated.
  6. Transfer the spinach mixture to a baking dish, spreading it evenly.
  7. Sprinkle sesame seeds on top and season with salt and pepper to taste.
  8. Bake in the preheated oven for 15-20 minutes, or until heated through and slightly browned on top.
  9. Remove from the oven and let it cool slightly before serving.
