Ingredients

  • Shiitake mushrooms - 8 large
  • Firm tofu - 200 grams, crumbled
  • Green onions - 2, finely chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Panko breadcrumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chili flakes - 1/4 teaspoon (optional)
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Carefully remove the stems from the shiitake mushrooms and set the caps aside.
  3. In a mixing bowl, combine the crumbled tofu, chopped green onions, soy sauce, sesame oil, minced garlic, grated ginger, panko breadcrumbs, salt, black pepper, and chili flakes if using. Mix well until all ingredients are fully incorporated.
  4. Stuff each shiitake mushroom cap generously with the tofu mixture, pressing down slightly to ensure they are filled.
  5. Arrange the stuffed mushrooms on a baking tray lined with parchment paper.
  6. Bake in the preheated oven for 20 minutes, or until the tops are golden brown and crispy.
  7. Remove from the oven and let cool slightly before garnishing with chopped cilantro.
  8. Serve warm as an appetizer or alongside a salad for a light meal.
