Ingredients

  • Soy sauce (low sodium) - 60ml
  • Mirin - 30ml
  • Rice vinegar - 15ml
  • Erythritol or stevia - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Green onions (sliced) - 2 tablespoons
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a small saucepan, combine soy sauce, mirin, rice vinegar, erythritol, minced garlic, grated ginger, and sesame oil. Heat over medium heat until the mixture begins to simmer, then reduce to low and let it thicken slightly for about 5 minutes.
  3. Place the salmon fillets on a baking tray lined with parchment paper. Brush the teriyaki sauce generously over the salmon, reserving some sauce for serving.
  4. Bake the salmon in the preheated oven for 15-20 minutes, or until it flakes easily with a fork.
  5. Once cooked, remove the salmon from the oven and drizzle with the reserved teriyaki sauce. Garnish with sliced green onions and sesame seeds before serving.
