Ingredients

  • Saba (mackerel) - 2 fillets (approximately 200g each)
  • Miso paste - 3 tablespoons (45g)
  • Mirin - 1 tablespoon (15ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Green onions - 2 stalks, chopped (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together the miso paste, mirin, soy sauce, and sesame oil to create the miso glaze.
  3. Place the saba fillets skin-side down on a baking sheet lined with parchment paper.
  4. Spread the miso glaze evenly over the flesh of the saba fillets.
  5. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and the glaze is caramelized.
  6. Once done, remove from the oven and let it rest for a couple of minutes.
  7. Garnish with chopped green onions and sesame seeds before serving.
