Ingredients

  • Mackerel fillets - 2 pieces (about 200g each)
  • Fresh ginger - 20g, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Spring onions - 2, chopped
  • Black pepper - to taste
  • Lemon - 1, sliced (for garnish)
  • Fresh cilantro - a handful, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix the grated ginger, soy sauce, sesame oil, minced garlic, and black pepper to create a marinade.
  3. Place the mackerel fillets skin-side down on a baking tray lined with parchment paper.
  4. Brush the marinade generously over the mackerel fillets.
  5. Sprinkle chopped spring onions over the top of the fillets.
  6. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
  7. Remove from the oven and let it rest for a few minutes.
  8. Serve garnished with lemon slices and fresh cilantro.
