Ingredients

  • Cod fillets - 300 grams
  • White miso paste - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sake - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, finely chopped
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix together the white miso paste, mirin, sake, sugar, and sesame oil to create a marinade.
  3. Place the cod fillets in a shallow dish and coat them with the marinade. Cover and refrigerate for at least 15 minutes (or up to 2 hours for more flavor).
  4. Remove the cod from the marinade and place it on a lined baking sheet.
  5. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  6. While the cod is baking, prepare the green onions for garnish.
  7. Once baked, remove the cod from the oven and sprinkle with chopped green onions and sesame seeds before serving.
