- Mirin - 1 tablespoon
- Sesame oil - 1 teaspoon
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Green onions - 2, sliced for garnish
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, for serving
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the soy sauce, mirin, sesame oil, grated ginger, minced garlic, salt, and black pepper to create a marinade.
- Place the mackerel fillets in the marinade, ensuring they are well-coated, and let them marinate for 10 minutes.
- While the fish is marinating, arrange the sliced daikon on a baking sheet lined with parchment paper. Drizzle with a little sesame oil, and season with salt and pepper.
- Remove the mackerel from the marinade and place it on top of the daikon slices on the baking sheet.
- Bake in the preheated oven for about 15-20 minutes, or until the mackerel is cooked through and flakes easily with a fork.
- Once done, remove from the oven and garnish with sliced green onions.
- Serve hot with lemon wedges on the side.
