Ingredients
- Short-grain rice - 150 grams
- Mixed mushrooms (shiitake, enoki, and button) - 200 grams, chopped
- Firm tofu - 150 grams, crumbled
- Soy sauce - 30 ml
- Mirin - 15 ml
- Dashi stock - 400 ml
- Green onions - 2 stalks, finely sliced
- Sesame oil - 10 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Panko breadcrumbs - 30 grams
- Grated cheese (optional, for topping) - 40 grams
Steps
- Preheat the oven to 180°C (350°F).
- Rinse the short-grain rice under cold water until the water runs clear, then drain.
- In a medium pot, combine the rinsed rice, dashi stock, soy sauce, mirin, salt, and black pepper. Bring to a boil over medium heat.
- Once boiling, reduce heat to low, cover, and simmer for 10 minutes. Remove from heat and let it sit for another 10 minutes, still covered.
- While the rice is resting, heat sesame oil in a skillet over medium heat. Add the chopped mushrooms and sauté for about 5 minutes until tender.
- Stir in the crumbled tofu and green onions, cooking for an additional 2-3 minutes. Remove from heat.
- Fluff the cooked rice with a fork and combine it with the sautéed mushroom and tofu mixture in a large bowl. Mix well to combine.
- Transfer the mixture to a greased baking dish and spread it out evenly. If desired, sprinkle panko breadcrumbs and grated cheese on top for a crispy finish.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.
- Remove from the oven, let it cool slightly, and serve warm.
