- Kabocha squash - 300 grams
- Cream cheese - 100 grams
- Shredded mozzarella cheese - 100 grams
- Grated Parmesan cheese - 30 grams
- Olive oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chives - 1 tablespoon, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Cut the kabocha squash in half, scoop out the seeds, and slice it into small cubes.
- In a large mixing bowl, combine the kabocha cubes with olive oil, garlic powder, salt, and black pepper. Toss until well coated.
- Spread the kabocha mixture evenly on a baking sheet and roast in the preheated oven for about 25 minutes, or until tender.
- While the kabocha is roasting, in another bowl, mix together the cream cheese, half of the shredded mozzarella, and half of the grated Parmesan until smooth.
- Once the kabocha is done, remove it from the oven and reduce the temperature to 180°C (350°F).
- In a baking dish, layer the roasted kabocha and pour the cheese mixture over the top, spreading it evenly.
- Sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake in the oven for an additional 15 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, garnish with chopped chives, and serve warm.
