Ingredients

  • Kabocha squash - 300 grams
  • Cream cheese - 100 grams
  • Shredded mozzarella cheese - 100 grams
  • Grated Parmesan cheese - 30 grams
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chives - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the kabocha squash in half, scoop out the seeds, and slice it into small cubes.
  3. In a large mixing bowl, combine the kabocha cubes with olive oil, garlic powder, salt, and black pepper. Toss until well coated.
  4. Spread the kabocha mixture evenly on a baking sheet and roast in the preheated oven for about 25 minutes, or until tender.
  5. While the kabocha is roasting, in another bowl, mix together the cream cheese, half of the shredded mozzarella, and half of the grated Parmesan until smooth.
  6. Once the kabocha is done, remove it from the oven and reduce the temperature to 180°C (350°F).
  7. In a baking dish, layer the roasted kabocha and pour the cheese mixture over the top, spreading it evenly.
  8. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  9. Bake in the oven for an additional 15 minutes, or until the cheese is bubbly and golden.
  10. Remove from the oven, garnish with chopped chives, and serve warm.
