- Bitter melon (goya) - 1 medium-sized
- Ground turkey - 200 grams
- Cauliflower rice - 100 grams
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- Slice the bitter melon in half lengthwise and scoop out the seeds with a spoon.
- In a mixing bowl, combine ground turkey, cauliflower rice, chopped green onion, minced garlic, grated ginger, coconut aminos, sesame oil, salt, and black pepper. Mix until well combined.
- Stuff each half of the bitter melon with the turkey mixture, pressing it down gently to fill it evenly.
- Place the stuffed bitter melon halves in a baking dish and drizzle with olive oil.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the turkey is fully cooked and the top is golden.
- Allow to cool for a few minutes before slicing and serving.
