Ingredients

  • Bitter melon (goya) - 1 medium-sized
  • Ground turkey - 200 grams
  • Cauliflower rice - 100 grams
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Slice the bitter melon in half lengthwise and scoop out the seeds with a spoon.
  3. In a mixing bowl, combine ground turkey, cauliflower rice, chopped green onion, minced garlic, grated ginger, coconut aminos, sesame oil, salt, and black pepper. Mix until well combined.
  4. Stuff each half of the bitter melon with the turkey mixture, pressing it down gently to fill it evenly.
  5. Place the stuffed bitter melon halves in a baking dish and drizzle with olive oil.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the turkey is fully cooked and the top is golden.
  8. Allow to cool for a few minutes before slicing and serving.
